Why the pepper is the important part

Curcumin — the compound turmeric is studied for — dissolves poorly in water and is cleared from the body quickly. Taken plain, very little of it gets anywhere. Piperine, from black pepper, has been researched specifically for its effect on curcumin absorption, and fat has been examined for the same reason.
